Recently replanted Trousseau vines replace older plantings in the Les Combes plot of Passenans, rooted in dominant red marl soils. The wine is vinified naturally without fining or filtration, with minimal sulfur added at bottling. Grapes are destemmed, undergo a 1-week maceration, and are aged nearly a year on their lees in Meursault barrels.
Bright and translucent, this Trousseau shows Poulsard-like delicacy with aromas of red fruits, tangerine, and citrus zest. The palate is floral and spiced, featuring kumquat and airy tannins, with a fresh finish touched by orange blossom. A joyful tribute to Gabi, the late cartoonist, whose signature phrase “bordel c’est bon” perfectly captures the wine’s spirit.
