This cuvée is the most classic from Sébastien : the only one where a low dose of strong is added before bottling (10 ppm, but not in vinification or aging) to stabilize the wine and then only fermented 24 months in stainless steel. 5 ha of vines of 30 years. Still low yield at 35 hl/ha, a touch of botrytis, 3 months of fermentation.
