A wine that was “flambeur” (high roller) in its youth (very fast alcoholic and malolactic fermentations) and improves slowly. Could be kept for another good ten more years. As per all of the estate’s wines, it was vinified without adding SO², bottled by gravity without filtration and clarified with the egg white of the estate’s hens. A dense spicy wine, on black fruits notes and pepper !
