A blend of mainly bitter apples and sour apples which are not in the usual cider “recipes” in terms of apple type proportions. This cider was initially made for distillation, but the evolution during fermentation led to the creation of a distinctive, slightly bitter and spicy cider. Far from the standards and the norms (‘Hors-Normes’).
