Miel de printemps. 10 g/L sugar.
30 hl/ha, no maceration. 5 months fermentation in a 10hL tank. Bottled in march, the apple juice and the honey were blended from the start of fermentation. The honey increases the alcool % and brings florals notes to the cider.
Chouf is an old local drink from Brittany made by the peasants when their honey productions was low. If the honey quantity was importertant they could make Chouchen (highly alcoholic mead requiring a minimum of 300g of honey per liter of juice).
