~ 1/3 Marie Ménard (bitter), 1/3 Douce Moen (bittersweet), 1/3 Judor (sour) ~
20 g/L sugar.
6 years of Solera. The Cider is aged in Eau-de-Vie de Cidre barrels ; since 2013, 1/3 of the juice is kept in the barrel for the following year. The 2018 solera includes juices from 13,14,15,16,17 and 18 that fermented together ; no filtration, only racking at bottling. The indigenous yeasts are working for several generations to make a unique cider. 500 bottles produced per year.
