17 g/L sugar (dry).
6 months fermentation in a 15-hL tank. Cider made from a blend of bitter, bittersweet, sweet and sour apples. The cider has finished all of its sugars during fermentation; it becomes drier with a greater alcohol potential, hence the name ‘Extra-Brut’. Dry, fruity and powerful and powerful at the same time, finishing with a lovely persistent bitterness.
