    ~ Anisé ~ ( Aperitif ) Highly appreciated throughout the Hellenic community, ‘O???’ is the anise of the island of Cyprus but closer to liquor (usually at around 30 %). In this stronger maceration the use of a bitter almond milk is unique to this preparation. For almost 10 years Bernard recreated this recipe transmitted by Brother Dimitrios, an old hermit from the island of Cyprus. The maceration of insoluble substances makes this creamy aspect to the cloudy anisé. A refreshing herbal pastis with a delicate fragrance that suggests bitter almonds.

    ~ Anisé ~ ( Aperitif ) There was no pastis drinking in Algeria, but anisette which is a special manufacture (different from the French anisette). Licorice is not used, the anisette is thinner than the pastis. It was following the request of many returnees that Bernard reconstituted this product.

  • DOMAINE LABET JURA
    ~ Fortified Wine ~ ~ 2/3 Chardonnay, 1/3 Savagnin ~ Made since the 14th century, Macvin is a fortified wine obtained from unfermented grape juice (about 2/3) to which 1/3 of Marc du Jura has been added. The marc are from labet’s harvest, distilled by themselves in an old pot still. Titling at least 52%, the marcs are aged two years in barrels before blending with grape juice. The Macvin is then aged for at least 18 months in 228 litre oak barrels. In France it is drunk mainly as an aperitif and is also appreciated, after a longer or shorter aging, with bitter dark chocolate desserts.

    From a plot in With a more natural philosophy in the vineyards and the cellar, the fermentations evolve and adapt from one year to another in order to obtain the desired density of sugar. However the restrictions imposed by the Institut National des Appellations d’Origines have meant a rejection of the product of Macvin appellation of Jura since 2015. Now in a more free and personal approach to their wine, Les Dolomies produces off appellation. Last Macvin from Les Dolomies under its AOP with 2/3 mout and 1/3 of marc.
