Julien Altaber

Bourgogne

Saint-Aubin

Julien Altaber, originally from southern Burgundy and not born into a winemaking family, always harbored a desire to work independently in his own vineyards. His journey into the world of natural wine began when he met Dominique Derain in Saint-Aubin, a pioneer of organic viticulture and natural winemaking in Burgundy. Recognizing a shared idealism, Dominique offered Julien the opportunity to work as his cellar assistant and tend to the vines, while also allowing him to produce a few barrels of wine in the cellar. During this time, Dominique assisted Julien in finding interesting and affordable parcels to purchase. Julien established close relationships with a small circle of growers in and around Saint-Aubin and the Côte Chalonnaise, sourcing fruit for his négoce cuvées. He believes that Burgundies are at their best without chaptalization, even if nature yields a mere 11% alcohol, as is often the case in this area. Fermentation is always spontaneous, and sulfur is generally avoided entirely. The wines are left unfiltered to showcase the aromatic complexity of Julien’s unique terroirs.
In 2020, Julien and his wife Carole took over the stewardship of Domaine Derain, continuing Dominique’s legacy while infusing their own creativity. They manage a 9-hectare estate across Burgundy’s Côte de Beaune, including appellations like Saint-Aubin, Puligny-Montrachet, and Pommard. Their vineyards are planted with Aligoté, Chardonnay, Pinot Noir, Gamay, and Pinot Gris, cultivated on soils of granite, clay, and limestone. The estate produces approximately 40,000 bottles annually, focusing on minimal intervention winemaking. Julien’s philosophy is not to produce a “Grand Vin,” but a “True Wine”: honest and with maximum drinkability. His wines, such as the Saint-Aubin Blanc, are fermented using natural yeasts and aged in aged French oak barriques for 12 months before being bottled unfiltered, unsulphured, and unfined. The result is a delicious wine that offers a perfect balance between freshness and ripeness, with a mineral depth and creamy texture that caresses the palate. Julien’s dedication to natural winemaking has made him a key figure in the natural wine movement in Burgundy.
