At Les Cigales dans la Fourmilière, winemaking follows a philosophy of organic viticulture and minimal intervention. Grapes are hand-harvested, fermented spontaneously with indigenous yeasts, and aged in large old barrels without fining or filtration. Sulfur is used sparingly, only when absolutely necessary. Their macerated whites—orange wines—are extraordinary: radiant and textural, with layers of dried herbs, candied citrus, stone fruits, and subtle spice. The skin contact gives them a gentle tannic grip and a vibrant, persistent finish, making them both powerful and ethereal. Reds, from Grenache, Syrah, and other Larzac varietals, are equally expressive, reflecting the minerality and heat of their stony slopes.
