The domaine produces a wide range of wines under the Cheverny and Cour-Cheverny appellations, with Romorantin as the flagship grape, alongside Sauvignon Blanc, Chardonnay, Menu Pineau, Chenin Blanc, Gamay, Pinot Noir, Côt (Malbec), and Pineau d’Aunis cultivated across its parcels. Domaine du Moulin was an early precursor of organic grape négoce in central Loire in the early 2000s, allowing the team to diversify and sustain production in response to variable climate and naturally low-yielding vines. In the cellar, Hervé employs concrete tanks, foudres, tronconic vats, neutral barrels, and amphorae, enabling each grape variety and parcel to express the subtle nuances of its terroir. The Cour-Cheverny wines, made exclusively from the rare Romorantin grape, fully reveal the character of soils, aspect, and microclimate. Today, Domaine du Moulin remains a family affair, with Hervé and Isabelle guiding production while their children have joined the team, preparing to carry forward the estate’s commitment to authentic, terroir-driven wines.
