Emmanuel Giboulot

Bourgogne

Beaune

Domaine Emmanuel Giboulot, located in the heart of Burgundy’s Côte de Beaune, has been a beacon of organic and biodynamic viticulture since its inception. Founded in 1985, Emmanuel took the reins from his father, Paul Giboulot, a pioneer in organic farming during the 1970s. The estate now spans 12 hectares, encompassing esteemed plots in Beaune, Rully 1er Cru ‘Les Pucelles’, Hautes-Côtes-de-Nuits, and Mâcon Villages, including a new cuvée from the lower slopes named after the local IGP Saint-Marie-la-Blanche. Emmanuel works the soil of each plot meticulously, respecting soil life and biodiversity, and employs full hand-harvests to ensure the best expression of each vineyard site. This commitment to organic and biodynamic practices has positioned Domaine Emmanuel Giboulot as a leading figure in Burgundy’s natural wine movement.
Purity, minerality, and character are the guiding principles of Emmanuel Giboulot’s winemaking. In the cellar, he practices a “gentle” vinification: alcoholic fermentation in open wooden tanks, natural extraction of aromas, tannins, and color without enzymes or heating, short maceration depending on each cuvée, followed by maturation in old French oak barrels. Each wine is crafted to express the truth and complexity of its terroir. Beyond his winemaking, Emmanuel became widely known for his principled stand during the flavescence dorée crisis, advocating for a non-intrusive, organic approach against compulsory pesticide treatments demanded by authorities. His dedication to letting the vineyard and soil express themselves naturally reinforces the estate’s reputation for wines that are pure, precise, and deeply reflective of Burgundy’s unique terroirs.
