Maurice de Mandelaëre

Sud-Ouest

Ayzieu

Domaine de Saoubis is located in Bas Armagnac, often regarded as the noblest cru of the Gascony region, famous for its sandy, silty and siliceous clay soils that yield spirits of great finesse. The 10 hectare vineyard sits in a single block within the wooded zone of Armagnac Noir, whose pine forests and moors provide natural protection and biodiversity. Since 1997, Maurice de Mandelaëre has cultivated the vines under strict biodynamic principles, with full Demeter certification achieved in the early 2000s. The vineyard is mostly planted to Folle Blanche, the historic grape of Armagnac but now rare across the appellation, along with Colombard and Baco 22A. The poor and sometimes acidic soils, low in limestone yet rich in sand and clay, contribute to wines and spirits marked by precision, minerality and aromatic freshness. Maurice allows the vineyard’s ecosystem to guide his work, avoiding chemicals and working closely with lunar and cosmic rhythms to preserve the vitality of the land.
In the cellar the same philosophy of purity continues. Saoubis relies only on free run and first press juice, ensuring that the most delicate fractions of the must are distilled. Fermentations are spontaneous with indigenous yeasts, followed by distillation in a traditional wood fired Armagnac alambic. The young eaux de vie are then aged in 400 litre oak barrels from Gascony, starting in new oak before being moved to older casks to preserve balance and terroir expression. No colourants, sulphites or added sugars are ever used. Alongside Armagnac, Maurice also produces a collection of artisanal liqueurs infused with botanicals and fruits such as fig, rose, orange and lavender, as well as an original liqueur wine blending fresh Baco must with aged Armagnac. Today, Domaine de Saoubis is celebrated by connoisseurs for its elegant and natural Armagnacs that embody both the heritage of Gascony and the estate’s pioneering commitment to biodynamics.
